The feature is triggered automatically when the phone loses connection to the mobile network. However, for now, only text messages can be transmitted via satellite - calls and mobile internet will not be supported if there is regular coverage nearby.
In the future, SpaceX and T-Mobile plan to expand satellite communications capabilities so that iPhone users can not only send messages, but also make calls and use mobile data.
